Garlic & Veggie Shirataki Spaghetti with Roasted Chickpeas

A fast, healthy vegetarian bowl by Nashi Foods

Ingredients 

  • 1 pack Nashi Shirataki Konjac Moyu Spaghetti  

  • 1 tsp avocado oil 

  • 2 cloves garlic, minced 

  • ½ small red onion, thinly sliced 

  • 1 medium zucchini, julienned 

  • 1 cup chopped broccoli 

  • ½ cup cooked chickpeas, lightly roasted 

  • ½ cup roasted red pepper, sliced 

  • ½ tsp crushed chilli flakes (optional) 

  • Salt and black pepper, to taste 

  • 1 tsp lemon juice 

  • Fresh parsley or coriander, chopped, for garnish 

Method 

Step 1: Prepare the Shirataki spaghetti 

Rinse the noodles 2-3 times under cold water. Heat in an open pan for 2-3 minutes or microwave for 1 minute. Drain and set aside. 

Step 2: Cook the aromatics 

Heat avocado oil in a wide pan over medium heat. Add garlic and red onion, stir for 30 seconds. 

Step 3: Add vegetables and chickpeas 

Add zucchini, broccoli, roasted red pepper, and roasted chickpeas. Stir-fry for 2-3 minutes until vegetables are tender but still crisp. 

Step 4: Combine with Shirataki spaghetti 

Add the cooked noodles to the pan. Toss everything for 1-2 minutes. Season with salt, black pepper, chilli flakes, and lemon juice. 

Step 5: Serve 

Plate immediately and garnish with fresh parsley or coriander. 

Serving Tip: 

Drizzle ½ teaspoon of extra olive oil on top before serving. It adds a silky texture.
