1 pack Nashi Tapioca Flat NoodlesÂ

120g chicken breast, thinly slicedÂ

1 tsp olive oilÂ
-
1 clove garlic, finely choppedÂ

80g green beans, trimmedÂ
-
60g courgette, slicedÂ
-
50g bell peppers, slicedÂ
-
1 tbsp low-salt soy sauceÂ
-
1 tbsp fresh lemon juiceÂ
-
½ tsp sesame oilÂ

Salt and black pepper, to tasteÂ

Small handful fresh corianderÂ
MethodÂ
Step 1:Â Prepare the noodlesÂ
Rinse the Nashi Tapioca Flat Noodles 2-3 times under cold water. Drain well and heat in a dry pan for 2-3 minutes. Set aside.Â
Step 2:Â Cook the chickenÂ
Heat olive oil in a wide pan over medium heat. Add garlic and stir for 20 seconds. Add chicken and cook for 4–5 minutes until fully cooked and lightly golden.Â
Step 3:Â Add vegetablesÂ
Add green beans and bell peppers. Stir fry for 2 minutes. Add courgette and cook for 1 minute more. Keep vegetables slightly crisp.Â
Step 4:Â CombineÂ
Add warmed noodles. Pour in soy sauce and lemon juice. Drizzle sesame oil. Add salt to taste and toss gently for 1–2 minutes to combine.Â
Step 5:Â FinishÂ
Season with black pepper. Garnish with fresh coriander and serve hot.Â
Serving TipÂ
Grate a little lemon zest over the top for extra freshness.Â
