Lemon Herb Chicken Konjac Shirataki Noodles

IngredientsÂ

1 pack Nashi Konjac Shirataki Mix PackÂ

150g chicken breast, thinly slicedÂ

1 tsp olive oilÂ
-
1 clove garlic, finely choppedÂ
-
½ tsp dried mixed herbs or oreganoÂ

1 cup courgette, thinly slicedÂ
-
½ cup bell pepper, slicedÂ
-
1 cup baby spinachÂ
-
2 spring onions, slicedÂ
-
1 tbsp low-salt soy sauceÂ
-
½ lemon zest and juice Â

Salt and Black pepper, to tasteÂ
MethodÂ
Step 1:Â Prep the noodlesÂ
Rinse the shirataki mix 2-3 times under cold water. Drain well. Heat in a dry pan for 2 minutes. Set aside.Â
Step 2:Â Cook the chickenÂ
Heat the olive oil in a wide pan over medium heat. Add chicken. Cook for 3-4 minutes.Â
Step 3: Add flavourÂ
Add garlic and dried herbs. Stir for 30 seconds.Â
Step 4:Â Add vegetablesÂ
Add courgette and pepper. Cook for 2 minutes. Add spinach and let it soften.Â
Step 5:Â Bring it togetherÂ
Add the Shirataki Mix to the pan. Pour in soy sauce and lemon juice. Add lemon zest and salt to taste. Toss well for 1-2 minutes.Â
Step 6:Â ServeÂ
Add spring onions and black pepper. Serve hot.Â
Serving TipÂ
If you want, add a soft-boiled egg or extra chicken.Â
