Lemon Herb Chicken Konjac Shirataki Noodles

Ingredients 

  • 1 pack Nashi Konjac Shirataki Mix Pack 

  • 150g chicken breast, thinly sliced 

  • 1 tsp olive oil 

  • 1 clove garlic, finely chopped 

  • ½ tsp dried mixed herbs or oregano 

  • 1 cup courgette, thinly sliced 

  • ½ cup bell pepper, sliced 

  • 1 cup baby spinach 

  • 2 spring onions, sliced 

  • 1 tbsp low-salt soy sauce 

  • ½ lemon zest and juice  

  • Salt and Black pepper, to taste 

Method 

Step 1: Prep the noodles 

Rinse the shirataki mix 2-3 times under cold water. Drain well. Heat in a dry pan for 2 minutes. Set aside. 

Step 2: Cook the chicken 

Heat the olive oil in a wide pan over medium heat. Add chicken. Cook for 3-4 minutes. 

Step 3: Add flavour 

Add garlic and dried herbs. Stir for 30 seconds. 

Step 4: Add vegetables 

Add courgette and pepper. Cook for 2 minutes. Add spinach and let it soften. 

Step 5: Bring it together 

Add the Shirataki Mix to the pan. Pour in soy sauce and lemon juice. Add lemon zest and salt to taste. Toss well for 1-2 minutes. 

Step 6: Serve 

Add spring onions and black pepper. Serve hot. 

Serving Tip 

If you want, add a soft-boiled egg or extra chicken.
